Description: Here is a medium sized vegetable dish. The eastern escarpment of the Catskills rises suddenly to the west of the Hudson River though their boundaries in any other direction are far less certain. Named by Dutch explorers in the early 17th century, the literal translation, "Cat Creek", may have been due to the bobcats in the area though the exact origin is also uncertain. In fact the mountains were not widely known by this name until the 19th century. Many of the locals preferred to call them the Blue Mountains, but the popularity of Washington Irving's stories fixed the name Catskill on the region. |
